The vines Along the gentle hills of the Sakar Mountain, not far from Harmanli, at an altitude of 130 meters, on cinnamon and gray forest soils, we cultivate our Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud, and Rubin grapes. The work with Chardonnay grapes from three different vineyards was fascinating and provided an opportunity to get acquainted with the expression and characteristics of the variety in our region. The grapes were carefully selected to match their ripening periods. Harvesting of the Chardonnay was done on August 27th and 28th, transported in crates of 12 kg, and stored in a refrigerated cooling chamber for 24 – 48 hours. The grapes were pressed in a basket press, and fermentation for the three wines took place in separate containers at a temperature of 14 – 16 °C. The finished wines were left for three weeks on fine lees before being blended. Chardonnay 2022 is a blend in equal parts of three wines from three vineyards: ROSALEA in the village of Shishmanovo and vineyards in the villages of Izvorovo and Momkovo.
