The vines Along the gentle hills of the Sakar Mountain, not far from Harmanli, at an altitude of 130 meters, on cinnamon and gray forest soils, we cultivate our Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud, and Rubin grapes. The grapes for this wine come from our vineyard in the village of Shishmanovo. All varieties were harvested at different times and vinified separately. The grapes, pre-cooled for at least one day and night, were drained and pressed in a basket press. The treatment and pressing were tailored to the characteristics of each variety. We have made maximum efforts to protect the grapes and the must from oxidation by using dry ice during processing. After clarification, the juice ferments at a temperature of around 14 °C. The resulting wines were blended after the completion of alcoholic fermentation.
