The vines Along the gentle hills of the Sakar Mountain, not far from Harmanli, at an altitude of 130 meters, on cinnamon and gray forest soils, we cultivate our Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud, and Rubin grapes. Technology One of the new stars of Sakar, a variety that consistently shows quality and characteristics. The 2021 harvest was favorable for Syrah in ROSALEA’s vineyard. Grapes for this wine were harvested on September 28th and October 8th, with sugar levels at 24.2 – 24.6% from two different parcels in our vineyard. One of them we call “bio” because it was not treated against diseases and pests and serves as an indicator for such conditions. Handpicking and foot stomping by an agronomist and oenologist. Fermentation took place in two vessels with an open cap – 750 and 1000 liters. One underwent no pre-maceration, while the other had a cold maceration for 7 days. Upon drawing the wines after completing alcoholic fermentation and pressing the solid parts in a basket press, only the free-run juice was separated from the press fractions and used in the final blend of the wine. Malolactic fermentation took place in barrels, and it aged in them for 10 months. After being taken out of the barrels, the wine stayed in a stainless steel container for a few weeks for natural clarification. Bottled with light filtration on August 23, 2022.
